WHere is a home-style take on a beverage from a new menu. This is a batch prepared mix which is bursting with the essence associated with festive period, which makes it ideal for your celebration. Any leftover cordial you can use for breakfast cocktails, puddings, or to make more rounds of the drink.
The Bikini Cocktail
Yields 10 guests
Ingredients for the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Premix (yields 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Put the listed ingredients in a pan, bring to a gentle boil, agitating to dissolve. Next, turn off the burner and let it to cool entirely. Decant into a clean bottle, cap it keeping it in the refrigerator, it can be stored for around a month.
Preparing the Batch Mix: Pour the specified liquids in a big jug, let it rest for one hour, then strain , ideally through a fine cloth, so it's completely strained.
To serve: Pour 85ml from the premix into a stirring glass containing ice, gently stirring gently for about 60 seconds to chill. Filter to a cold coupe glass or similar, top with a few cranberries and complete it using a brief mist of the essential oil above the glass.
